You May Have Noticed...

that I have been MIA for a while.  I don't like writing this type of post, and I've always read that a blogger should NEVER write a "sorry I've been gone for so long" post.  I don't know why that type of post is considered taboo, but apparently it is.  As it turns out, life got extremely, extremely busy for me.  Aside from the everyday craziness that is my life, we got a few surprises and had to make some serious decisions.  And as much as I didn't mean for it to happen, my poor little blog had to take a back seat.

We received some rather important news at the end of 2011.  Of all the things in the world, I was not expecting this news.  We learned that we were expecting our third child.  Holy moly, was that ever a surprise.  My husband and I had talked about having another baby, and had thought about when we would want to have said baby.  Well, baby decided for us.  And I'm happy to announce that we indeed had our third baby boy in August of 2012.  He is a wonderful little guy, and is a spitting image of his two big brothers.

With the impending new arrival, we decided that we could not squeeze another living being in our tiny little house.  There were two adults, two crazy-wild boys who were growing every day, a seventy-something pound golden retriever, and two cats in a mere 1200 square feet.  We had talked about moving for years.  We weren't really happy living in a busy town.  I grew up in the country, and I was anxious to get back to that type of life.  I wanted room for my boys to run and play.  I wanted to be able to plant a garden and have a real compost pile.  I wanted to be able to take a walk with my kids without having to worry about one of us being hit by a car.  I wanted to be able to let my dog run rather than walking him on a leash.  Most of all, I longed for the quiet and the stillness that the country offers.

At our house, we had a very small back yard and virtually no front yard.  And as much as I adored my neighbors, I was itching for my privacy.  So, we decided to move.  We moved onto my family's property, just steps from where I grew up.  We have much more space, plenty of room for the kids to play, and a much bigger kitchen for me.  I am happy.

So, now that I feel *somewhat* settled, I plan to bring my little piece of the blogosphere back to life.  I have lots of new recipes I want to try and share.  I am very excited about the holidays coming up, and I'm planning lots of fun projects.  I hope you will come back to see what we're going to be cooking up.

Also, if you have a recipe or project you'd like to feature on Just Take Two Bites, just email me at justtaketwobites@gmail.com.

Hope to see you soon!
