Apple Cinnamon Oatmeal Bites

I am always looking for breakfast items or snacks that are portable.  We are on the go quite often with soccer, school, outings, and a million other things.  If I can give my kids breakfast in the car, it saves precious time when we are trying to get out the door.

I came up with these apple cinnamon oatmeal bites when I was trying to figure out a way to make oatmeal portable.  I know, that sounds like a silly idea.  But my boys love oatmeal, and it is a way I can get them to eat some fruit (well, to get my oldest to eat fruit, as my two-year-old will eat almost anything). 


So, I decided to come up with a mini muffin recipe that included all of the ingredients of a big bowl of oatmeal.  These turned out great.  I added flax seed because my children do not care for nuts.  The flax adds some healthy omega-3’s that are so good for them.  And the best part is they don’t even know it’s there.  But, if your kids like nuts, feel free to add some.  Walnuts or pecans would be fantastic in these.

I’ll put a few of these in a plastic container, put milk in their sippy cups, and we are out the door.  There’s nothing like a quick and easy breakfast.

Ingredients
  • 2 eggs
  • 2/3 cup brown sugar
  • 1/2 cup applesauce
  • 2/3 cup milk
  • 1 cup whole wheat flour
  • 3/4 cup quick cooking oats
  • 1/4 cup ground flax seed
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1 cup peeled and finely chopped apple
Instructions
  1. Pre-heat oven to 400 degrees
  2. Grease mini-muffin pan
  3. Whisk eggs, sugar, apple sauce, milk until smooth
  4. In a separate bowl, combine the flour, oats, flax seed, cinnamon, nutmeg, baking powder, baking soda, and salt
  5. Mix the dry ingredients into the wet ingredients
  6. Fold the apples into the batter
  7. Fill the mini-muffin pan with the batter.  Fill to the top, as these do not rise very much.
  8. Bake for approximately 10-12 minutes, or until tops are golden brown
