Make Your Own Monday- Pancake Syrup


Make-Your-Own Monday is a weekly series that challenges you to take something that you would normally purchase in the grocery store and make it yourself.  This challenge is about getting the processed ingredients out of your kitchen, making your home and family healthier, and saving money. 



Have you ever had one of those "oh gosh!" moments?  I had one recently.  I spent quite a while last Saturday morning making waffles for the family.  As I was finishing up the last batch, I reached in the fridge to get the syrup.  I looked around the refrigerator to find no syrup.  Then I remembered we used it up the weekend before.

Crud.


I wasn't going to let my lack of syrup ruin the waffle breakfast that my family was eagerly anticipating.  So I decided to experiment a bit.  I figured syrup is really just sugar that is cooked down.  How hard can it be?

As it turns out, it was quite simple.  And fast.  And delicious! 

I had the ingredients in my pantry for the syrup, as I'm sure most people do since they are pantry staples that everyone uses.

Here's what you need:
  • 1 cup white granulated sugar
  • 2 cups brown sugar (I used light brown)
  • 1 cup of water
  • 2 teaspoons vanilla extract
  • 1 teaspoon maple extract (this is optional)
  1. Bring the sugars and water to a rolling boil in a heavy pot.
  2. Lower the heat to medium and cook for about five minutes.
  3. Remove the pot from the burner and add your extracts.
  4. Allow the syrup to cool a bit before serving.  Store in the refrigerator.
