This Week's Menu Plan



Last week just seemed to fly by for me.  What about you?  It seems like it was just Monday.  Oh well, here's to a new week!

My two oldest children are home from school today, so as you can imagine I am not getting very much done. One thing I am going to do is some baking for the freezer.  I don't have a lot of room in my freezer at the moment thanks to a wonderful summer veggie harvest--but I do have just enough room for a few batches of muffins.


We love muffins for breakfast. I usually serve them with something like scrambled eggs or fruit.  Some mornings we just grab a few before school or errands. 

I'm trying some new recipes today. I'm experimenting with a new blueberry muffin recipe. I'm also making pumpkin muffins and banana bread muffins. Yum!

Here's What We're Eating This Week:

Breakfasts-

Oatmeal, cheese toast, smoothies, scrambled eggs, fresh fruit, homemade blueberry muffins

Lunch-

Leftovers. Peanut Butter & Jelly Bars
PB&J, chips, sliced apples
Fun lunch (crackers, cheese, yogurt, fruit, and veggies with ranch dip)

Dinner-

Red Beans & Rice, cornbread
Tacos, Spanish Rice, homemade refried beans, super easy guacamole
Chicken and Rice, broccoli and cheese
Pork Roast, sweet potatoes, salad
Turkey & Sausage gumbo, French bread
Pizza Pockets, salad
Leftovers
